A plate of paneer paratha

A paneer paratha doesn't have to be a diet-breaker. Made with 30 g whole-wheat atta, a generous 30 g of spiced paneer, and just 1 tsp oil, each paratha has about 230 kcal and 9 g protein. That's less than half a dhaba paratha with butter, and with a bowl of curd it's a filling breakfast under 300 kcal.

Ingredients

Dough

  • 120 g whole-wheat atta, about 1 cup

  • ¼ tsp ajwain

  • A pinch of salt

  • About 70–80 ml water

Filling

  • 120 g paneer, finely grated

  • 1 green chilli, finely chopped

  • 2 tbsp chopped coriander leaves

  • ½ tsp roasted jeera (cumin) powder

  • ½ tsp chaat masala

  • ¼ tsp garam masala

  • Salt to taste

  • 2 tbsp finely chopped onion, squeezed dry (optional)

For cooking

  • 4 tsp oil or ghee (1 tsp per paratha, ½ tsp on each side)

Method

  1. Make the dough. Mix atta, ajwain and salt. Add water a little at a time and knead to a soft, smooth dough, a little softer than roti dough. Cover and rest 15 minutes.

  2. Make the filling. Mix the grated paneer with chilli, coriander, jeera powder, chaat masala, garam masala, salt and onion, if using. Mash lightly with your fingers so there are no big lumps. Divide into 4 portions.

  3. Stuff. Divide the dough into 4 balls. Roll one into a 4-inch circle, place a portion of filling in the centre, bring the edges up, and pinch to seal. Flatten gently.

  4. Roll. Dust with a little atta and roll gently into a 6–7 inch paratha, pressing lightly so the filling doesn't burst through.

  5. Cook. Heat a tawa on medium. Cook the paratha dry for about 1 minute, until small bubbles appear. Flip, and cook the second side 1 minute.

  6. Add oil, measured. Spread ½ tsp oil or ghee on top, flip, and press with a spatula until golden spots appear. Spread ½ tsp on the other side and repeat.

  7. Serve hot with curd and green chutney.

Tips for parathas that don't burst

  • Grate the paneer finely, and mash it; big crumbs tear the dough.

  • Squeeze the onion dry. Wet filling makes the dough soggy and leaks.

  • Don't overfill. About the same weight of filling as dough is the safe maximum.

  • Roll lightly from the centre outwards, turning the paratha as you go.

  • Measure the oil with a teaspoon. That one habit saves 50–100 kcal per paratha compared with pouring.

Make it higher in protein

  • Mix besan into the dough. Replace a quarter of the atta with besan. Calories stay the same, protein goes up by about 1 g per paratha, and it adds a nutty taste.

  • Use more paneer. 40 g of filling instead of 30 g adds about 2 g protein and 25 kcal.

  • Add crumbled tofu to the paneer, half and half. It's lighter, with similar protein.

  • Serve with curd, not pickle and butter. A bowl of curd adds 5 g protein; butter adds only fat.

Make it a meal

  • Weight-loss breakfast: 1 paratha + 100 g curd, about 290 kcal and 12.5 g protein.

  • Regular breakfast: 2 parathas + 1 bowl curd + green chutney, about 550 kcal and 23 g protein.

  • Tiffin: 2 parathas with a small box of curd and salad. They stay soft for 4–5 hours wrapped in foil.

Atta, paneer, 1 tsp oil

Atta, potato, ghee

Bigger size, more ghee, a cube of butter on top

The filling isn't the problem. A paneer paratha actually has more protein than an aloo one. Size and fat are what push a dhaba paratha to double the calories. Cook at home, measure the oil, and skip the butter, and a paratha fits a weight-loss plan.

FAQ

How many calories are in 1 paneer paratha?

About 230 kcal for a home paratha with 30 g atta, 30 g paneer and 1 tsp oil. A dhaba paneer paratha with butter is usually 400–500 kcal.

How much protein is in paneer paratha?

About 9 g per paratha made with 30 g paneer. With 40 g paneer, or besan mixed into the dough, it reaches 10–11 g.

Is paneer paratha good for weight loss?

It can be. One low-oil paneer paratha with curd is about 290 kcal and 12.5 g protein, similar to most healthy breakfasts. The problems are extra ghee, butter on top, and eating 3–4 at once.

Paneer paratha or aloo paratha: which is healthier?

Paneer paratha has nearly double the protein and keeps you fuller. Aloo paratha has more carbohydrate and less protein. Both are fine occasionally if you measure the oil.

Can I eat paratha every day and lose weight?

Yes, if it fits your daily calories. One low-oil paneer paratha with curd is about 290 kcal. Rotate it with chilla, idli or oats upma for variety.

Can I make paneer parathas ahead?

Yes. Half-cook them (about 30 seconds per side, no oil), stack them with butter paper in between, and refrigerate for up to 2 days or freeze for a month. Finish them on the tawa with the measured oil when needed.
